Breakfast Cacio e Pepe - Prep

1. Crack two larges eggs into a microwave safe bowl

2. Drizzle about 2 tablespoons olive oil

3. Add cracked black pepper and sea salt to taste

4. Vigorously whip into a bubbly froth with a sturdy dinner fork

5. Cover with a paper towel and place into microwave for 45 seconds

6. There will be a ring of cooked egg on the peripheral of the bowl surrounding the liquid center

7. Whip the cooked egg and liquid egg batter into a froth and place back into the microwave for an additional 45 seconds

8. Remove from the microwave while there is a remaining pool of liquid egg and olive oil batter in the center

9. Cover pool of egg batter with approximately 3 tablespoons nutritional yeast

10. Add 2 additional tablespoons of olive oil over nutritional yeast and around the bowl, then whip vigorously to blend egg batter, olive oil, nutritional yeast, and the cooked egg.

11. Scrape sides of the bowl with the fork, and robustly combine ingredients until blended into a gravy

12. Plate and add additional black pepper, salt, and olive oil to taste
