Black Vinegar Spinach Salad

Black Vinegar Spinach Salad is smooth and savory with a unique punch. It pairs beautifully with salmon, or with an over easy egg on top.

INGREDIENTS -
Two Servings -
5 ounces Baby Spinach
8 ounces cherry tomatoes
1 ripe avocado
1 medium cucumber - sliced and halved
3 green onions
2 garlic cloves
1 tablespoon Kewpie Mayonnaise
Splash of olive oil
2 teaspoons of white cider vinegar
1 tablespoon Diluted Black Vinegar
Salt, black pepper
Sprinkle of black sesame seeds
PREPARATION -
cube avocado and add to a large mixing bowl with minced garlic, mayonnaise, black vinegar, olive oil, white cider vinegar, finely chopped green onions, salt, pepper to taste
blend ingredients until avocado breaks down into small bits
Add spinach and mix thoroughly
generously sprinkle sesame seeds, more pepper, salt
NOTES -
Black sesame seeds are preferred, but white seeds or a blend of both are good too. Black seeds are nuttier, more earthy, while white seeds are milder and sweeter. (White sesame seeds are black seeds without the hull.) Kewpie Mayonnaise is preferred as it is a blend of egg yolks and vinegars resulting in a rich, tangy and umami-forward flavor with a creamy texture.
