Avocado Salad Tartine

The tartine is the national breakfast of France - it is a country bread toasted on one side, topped with sweet or savory ingredients as simple as butter and jam for breakfast, salmon and cucumbers for lunch, or as luxe as roquefort and beef for dinner.

INGREDIENTS -
Serves 2
1 ripe large avocado
4 - 6 Cherry tomatoes or about 5 ounces Roma tomato
2 Scallions
1 tablespoon extra-virgin olive oil
I tablespoon unsalted butter
Fresh parsley (optional)
1 peeled garlic clove (optional)
2 slices of crusty bread
Salt and pepper to taste
Maldon flaky salt to finish

PREPARATION -
Dice avocado into about 1 inch cubes, halve the cherry tomatoes (or cut Roma tomatoes into 1 inch chunks), slice scallion into 1/2 sections, finely chop garlic, and rip in a few sprigs of fresh parsley
Add olive oil, salt, pepper to taste and mix
Heat butter and a splash of olive oil in cast iron skillet until bubbly
Slice bread to about 1 inch thickness, place in skillet
Grilled one side only to perference
Plate grilled side up and top with avocado salad
Finish with Maldon flake salt, fresh ground pepper, and a splash of olive oil
NOTES -
Toasting bread in an iron skillet adds flavor, color, texture, caramelization, and nuance that can not be duplicated with a toaster or oven
A classic French tartine bread is most often a baguette or sourdough - or other tight grained country bread that maintains a sturdy crunch under the toppings.
