Grilled Brie

An elevated grilled cheese that pairs creamy, melted brie with sweet caramelized onions on crusty, toasted ciabatta.

Under 30 minutes
INGREDIENTS -
Serves 4
4 slices ciabatta bread
6 ounces Brie with rind
2 tablespoons extra-virgin olive oil
1 large white onion
Unsalted butter
Salt and pepper to taste
TOOLS -
Cast iron skillet
Offset spatula
PREPARATION -
Slice onion crosswise, separate the rings
Place into low to medium heat skillet with olive oil, salt, and pepper
Toss and stir until onions become soft, translucent, and caramel brown - monitor to avoid crispy edges, then remove from the skillet
Slice bread to about 1 inch thickness, and place in the skillet with one tablespoon butter and additional olive oil if necessary at medium to high heat
Grill both sides of the toast to preference
Keep brie chilled prior to slicing or it will stick to the knife - slice to about 1/4 inch thickness
Add sliced brie and onions, and add top toast
Turn off heat and cover for two minutes to allow cheese to melt
Add fig jam or arugula on the side, bacon, a pickle, or another favorite accompaniment
NOTES -
The rind of Brie cheese adds crucial flavor, texture and nutrients, and is meant to be eaten
Toasting bread in an iron skillet adds flavor, color, texture, and nuance that can not be duplicated with a toaster or oven
The mixture of butter and olive oil ups the burning point, allowing for a bigger crisp, and more flavor
