Broccoli Frittata

A Frittata is an Italian open-faced, crustless egg dish, similar to a quiche or omelet, where the eggs are mixed with ingredients like cheese, meat, and vegetables. In this iteration there is one bowl, minimal ingredients, easy clean-up, and tasty perfection. That’s what this breakfast suggestion is, not so much a recipe, but an idea that can be tweaked to the moment with available ingredients - in this case, broccoli with salt, pepper, and generous amounts of olive oil.

INGREDIENTS -
Per serving
Two large eggs
8 ounces broccoli
Extra virgin oil olive
Salt, pepper
Maldon Salt Flakes
PREPARATION -
Place broccoli into microwave safe bowl
Douse with olive oil, salt, pepper
Cover bowl with a paper towel and microwave for 3 minutes
Stir, then cook for an additional 1 minute or until tender
Push broccoli aside, add two eggs, olive oil and scramble
Submerge broccoli into egg mixture, then microwave for about one minute
There will be liquid in the center, surrounded by cooked egg on the peripheral of the bowl
Run fork under the cooked portion of the egg, add olive oil around the edge of the bowl
Cook for additional 30 seconds or until firm
Loosen from bowl and plate bowl side up
Drizzle olive oil, add black pepper, and salt flakes
NOTES -
The Frittata can be modified with different or additional ingredients, and cheese or meat. Frozen vegetables make this an economical, versatile, nutritious, easy meal.
